I love this feature since we are a mobile dentist so we have always wanted to group our patients by the nursing facility they live at, but is there going to be a way to sort the list how we want to? Currently it looks like it is listed by patient number, maybe, and the guaranteer is listed first. I would love for it to be listed in patient order alphabetically. Anyone else using this feature or know more about how to take better advantage of it?

We use super families here at HQ and you are correct, it is explicitly sorted by PatNum (but showing the super family heads at the top). This is how we desired to use it but I can see how you would want that list alphabetized. It would be an extremely easy feature request to implement an option to sort the super family grid differently. You should add it to our request system:
