One PPO pays one % and another categorize procedure in different category and pays diff %. Other than remembering the exception is there any way to set up so that different PPO have different Procedures in their Cat.
eg 2950 is cat fillings at 80% for one ppo and is Crown and bridge @50% for another PP0

There isn't a way to assign a procedure to a different category for a specific insurance. What you could do is setup a an "Other Benefit" for your second PPO for the D2950 with a percentage of 50%. You would have to do this for each procedure that is in its non-standard category.
